Is there a way to have Tap Forms automatically add a manually entered text value into that field’s pick list so that it shows up in the list the next time a record is created? If not, can I request that as a feature?

Not at the moment. But when you select from a pick list, there’s a + button there which will let you add a value.

Unfortunately this isn’t true on the Mac app. You have to go back to the List Editor, add the item, then go back to the form, show the list, and then choose it.
Would really like to be able to have new items automatically added to the Pick List. And/or autocomplete based on previous values.
Ah yes, you’re right. I thought you were talking about the iOS version. The interfaces are quite different for that. Are you saying that you want every value you enter into a field to be automatically added to any associated pick list?
