I have a few fields set up as notes. When I’m in the default view and enter data, it skips the notes fields and jumps to the next non-note field. Is there a way to edit these fields without resorting to the mouse to select them?

Not on the Default Layout. You have to click on the button to edit the Note in the note edit window.
You can create a custom layout and drag out the Note fields and size the boxes to whatever you’d like. Then you can tab from field to field. Although for Note fields, the tab key would take you into the field, but not out of it. When you type a tab inside a Note field on a custom layout, it just inserts a tab character into the Note field contents. Press control-tab will take you out of the Note field.
