I have used FM pro for a very long time. It is now priced out of my range and I am trying the 30 day free trial of Tap Forms. My brain may have aged too much, but I am unable to get my data to show up in the layout.
As I understand it, a document is like a folder which holds your form(db) and I should be able to view it in different layouts. Do I have tapform lingo down?

Yes that’s right. You could also think of a Document as sort of like an Excel spreadsheet. In an Excel spreadsheet document, you can have multiple worksheets, each containing different information. The worksheets would be equivalent to a Form in Tap Forms. So one Document can contain many Forms. Each Form contains Fields which define what information you’re collecting. And each Form contains 0 or more Records which are basically just instances of the form that hold all your data for the fields you’ve defined.
