I have a custom form. There are certain fields which call for “interaction,” i.e., I make some input: either select a date from a calendar, make a selection from a pick list, select from another file, or mark a checkbox. When I open the program and this form, the fields I mention will not allow input—the selector (which is normally blue like a link) is greyed out. If I click on either the Form or Layout buttons on the top of the screen, these fields then become active. Brendan told me once “It may be possible that you are on a custom layout and you have the Layout Inspector panel visible? If so, dismiss that and the Pick List button will become enabled.” Well, that panel is not visible, but if I click and make it visible and then close it, the fields are enabled.
How can I get rid of this intermediate step of having to click on the buttons to activate these fields?

Hmm… that’s odd. If the inspector panel is not visible, then you should not be in layout edit mode and the accessory controls should be available.
Try clicking the form button so the form inspector panel is visible, then quit Tap Forms. Then launch Tap Forms and see if those accessory buttons are active.
