Does anyone know what the font is for the fields in Tap Forms? Whenever I paste text into a note type field, it doesn’t match and I’m playing trial and error to try and make the note text match the other text. It’s particularly off when I print a record.

The default font is whatever font you used last time. Tap Forms stores that font and uses it to set the typing attributes of the Note field when you open a note.
If you want all your fonts to be the same for all records, you can use the Apply Font Style to All Records button after you change the font for your text.
